Huia, Blanc de Blancs 2017

Huia is built on the belief that a natural approach to winemaking produces the best tasting wine. Calling Marlborough, New Zealand, home, their focus is to become more and more in tune with the total environment of the vineyards. They believe that working in harmony with the entire countryside provides balance and longevity to their wines; so sheep and chickens wander through the vines, bees pollinate all the wildflowers, and olive trees are planted on the borders of the vineyards too. This exceptional Blanc de Blancs is crafted from 100% organically grown Chardonnay grapes, hand-harvested and whole-bunch pressed. Extended ageing of 32 months on lees gives this sparkling wine remarkable complexity and finesse. Bright aromas of lemon zest, green apple, and toasted brioche is underpinned by a hint of roasted nuts. The palate is vibrant and structured, with crisp citrus flavours, creamy texture, and a delicate mousse; which leads to a long and refreshing finish, with lingering minerality and a fine, balanced acidity.
